How do indentify a stable rom?

Hey,

so basically im relatively new to the custom rom business. For now i only installed and tested roms that there labeled as stable, but as i can't barely find any threads labeled as stable, how do i identify stable roms? I once installed a lineage nightly build and my Redmi wasn't usable in a few days... Anyone can explain me something?
